I gave up gluten for Lent so I can better learn to cook GF for Mary. I had defrosted some walleye for dinner but hadn't decided how in the world to fry it. Typically, we use Fryin' Magic but that's definitely out! I have the Bob's Red Mill brown rice flour on hand so I mixed that with some crushed Rice Chex. I threw in a bunch of dried parsley, salt and garlic powder and made a tasty, surprisingly panko-like, breading. I think this is the best GF meal to date! I was going to take a picture but we ate all of the fish! I paired it with cottage cheese and salad. This may be our recurring friday night meal. I might splurge one of these fridays and have a GF beer, what's better than Lake Erie walleye and beer?!

Wheat free cake-ick
It looks like, and has the texture of, cornbread. It's crumbly (maybe I should under bake it a little next time) and it's flat! The sugar was still "crunchy" too. I won't use that recipe again for cake but I might try it for muffins. I made a simple icing so Katie could spread it around. So, the girls loved it and the grown-ups thought it was mediocre. If I was a milk drinker I would think a large glass would have been good!

Today is our first Gluten-Free Meal
Mary turned one Wednesday and we're just getting around to making her birthday meal. Katie picked out her dinner and helped make her cake. What's on the menu? Sloppy Janes (Hamburger Gravy over Mashed Potatoes), green beans and a Wheat Free birthday cake.
I panicked when Katie picked out Hamburger Gravy, I've only made it with flour! And cake. Hmm....
Thank goodness for the internet! I found a simple Wheat-free cake recipe using brown rice flour. After a little thinking I've decided to use the same flour for the gravy. The meat is thawing and Katie and I have the cake in the oven as I sit and type so I'll be sure to post a picture and a review! My fingers are crossed!
